Almond & Coconut Truffles 

Almonds are another great source of calcium containing 264mg calcium per 100g and so easy to consume daily. These yummy truffles taste super indulgent but are packed full of nutrient rich goodies.

Almond and Coconut Truffles

Ingredients

1 cup dates
1/2 cup almonds
1/2 cup sunflower seeds
Juice and zest of a clementine
1/2 tsp vanilla extract
1 tsp cinnamon
1 tblsp cacao powder
Handful desiccated coconut 

 Method

  1. Chop the dates and place in a bowl along with the juice and zest of the clementine, vanilla and cinnamon. Leave to soak for 30 minutes.

  2. Toast the almonds and sunflower seeds for a few minutes until they start to turn golden. When the nuts have cooled down, place them in a good processor and blitz to fine breadcrumb consistency. Add the soaks dates and juices plus the cacao powder and blitz to combine. You should end up with a sticky dough. 

  3. Place the desiccated coconut in a bowl. Roll the dough into a log shape and cut into 12 portions. Roll each portion into balls and 1 by 1 drop into the coconut to coat the surface.

  4. Place in the fridge for a few hours to harden
