Sweet Potato Hummus

Sesame seeds are an excellent source of Calcium with 975mg per 100g and Tahini is a great way to provide your kids with a concentrated source of Calcium. Sesame seeds are also rich in Magnesium and Zinc, both important minerals for Children’s health. Plus they are protein packed and offer dietary fibre, important for gut health.

1 medium sweet potato
3 tablespoons Tahini paste
4 tablespoons extra virgin olive oil
1 can of chickpeas drained and liquid retained
1 glove of garlic crushed
Zest and juice of 1 lemon
½ teaspoon ground cumin
pinch of smoked paprika
Grind of pepper 

  1. First bake the sweet potato at 180 fan for 30 mins until soft.

  2. Leave to cool and scoop out the flesh.  

  3. In a blender, combine the cooled sweet potato flesh with all the other ingredients and blend together until it’s starting to look smooth. With the motor running slowly add the reserved chickpea liquid until the hummus has reached your desired consistency.
